Do you know what you do when you’re craving both pancakes and muffins for breakfast?
Why, you make Vanilla Bean Muff-Cakes, obviously!
What is that you say? You don’t know what a muff-cake is?!! Haha well…I don’t expect you to! Because this morning I wanted something like a cross-over between a pancake and a muffin. Alas! The Muff-cake was born!! *cue the AHHHHH sound with golden rays of sun*
Vanilla Bean Muff-Cakes
1 C oat flour (I just grind my own–at least 1 heaping cup of oats in a processor)
1/2 C whole wheat pastry flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
3/4 tsp vanilla bean powder (You can still use 1 tsp extract instead)
1 TBSP olive oil
1 C buttermilk***
***You can make buttermilk by first adding 1 TBSP lemon juice or vinegar in a measuring cup and then filling it up to 1 Cup with almond milk or any milk of your choice***
First, start with the buttermilk process so that it curdles while you’re making the mixture.
Then, grab a large bowl and mix all the dry ingredients together. In a separate small bowl, whisk the wet ingredients. Pour it into the dry ingredients and whisk away. Just don’t over mix as it can beat the air out too much.
Lightly spray or oil a muffin pan and pour the mixture about half way.
Bake it at 375 F for 12 minutes and it is finished! This makes approximately 11-12 servings.
So moist and chewy…Just the way I intended it to be! Not too sweet either, but perfect for breakfast. At least for moi.
And of course I had to smother it with homemade chocolate PB! And with some yogurt and banana on the side.
I was so very happy that these muff-cakes were such a great success! SCORE! haha it just feels so good when baked goodies come out the way you want them to, no?
The vanilla beans give it a subtle hint of aroma, and the buttermilk along with honey makes it unfathomably moist and perfectly chewy.
Now, moving onto tomorrow~Russell is comin’ to town! This time it’s only him, and he’s only here for Sunday. Even though we only get to see him tomorrow, I’m so excited to spend time with him. His visit is actually kind of random…haha.
Today was a rather chill day for me. Although I have to admit that as the day passed by, my mind and my heart were a-racin’ with weird emotions! However later, I really had the opportunity to internalize everything in my mind lately. As each day goes by, my hunger for God grows deeper. Nevertheless, I don’t want to just DESIRE more of Him because He’s already given all of Himself to me! I want to actually step out in faith in everything and anything that I do.
I am by no means attempting to gain His favor, but I’m just merely wanting to draw closer and deeper into His love and find the little gems of revelations He has in store for me. This is truly about a relationship with Him. It’s not about rules or trying to gain anything from Him, but just spending time with Him and knowing Him more, just as I would with Greg or any loved one. ^.~
Fortunately, I got to do just that today! I mean, I love my sis and her family–but I haven’t gotten that completely quietness at home lately. But good news is that I did today because they were out and about for several hours.
I just turned on some music and sat there in His presence! As much as I have to tell God about everything, I knew that He just wanted me to “be still and know that He’s God”. It was such a sweet moment in slowing down and giving Him thanks for just WHO HE IS.
It was definitely a good breather and a time of refreshing my spirit!
I genuinely hope for y’all to take a breather as well if you’re needing it!
