Chocolate Socca Pancakes & a Smile

You know what brings a smile to my face?

Hehe you can tell I was having fun with photoshop, can’t ya?

Now, THIS will bring a smile to your face!  Let’s go ahead and turn that frown right side up, shall we? :D

Chocolate Socca Pancakes

Ingredients:

1/4 C garbanzo flour (chickpea)

1/4 C oat flour (I grind my oats)

1/2 tsp baking powder

3 tsp unsweetened cocoa powder

1/2 tsp stevia

1/2 C almond milk

1/2 tsp vanilla

Directions:

First, grab a medium bowl and mix all the dry ingredients.  Then, simply add the wet ingredients and whisk away! The consistency will be perfectly liquidy, but will hold together rather well.

When you ladle on the batter onto the sprayed pan, you can use the 1/4 C measuring cup to make them even.  Approximately 3 pancakes will come out as a result.  Serves 1 happy camper. :P

I had ‘em with a side of bold coffee as usual.  I didn’t realize how much I missed coffee since my recovery!

Of course, I topped it off with one of my fave foods.  Fage Greek yogurt, honey,  and fruit.

I really loved these pancakes because of their nutritional value, and because they’ve been keeping me satiated for at least 3 hours so far!  That’s rare for me as I’m usually hungry every 2 hours.

They’re a bit on the chewy and dense side, as opposed to the normal “fluffy” and buttery effect that one would expect from pancakes.

Now, I don’t count calories and I usually eat perfectly sized portions for ME.  I wouldn’t want anyone to get obsessed with all that useless calorie counting junk–at least not when they’re here in this blog.

I do, however, count them if I’m eating, say…a twinkie or something.  Hah! Just an example.

Regardless of all that, I’d like to show you the amazing nutrition in this breakfast pre-topping!  Just because I know that calories are still important to some extent, and some of you may want to know the protein statistics. I think it all depends on when and why we should think about calories.  Moderation in thinking about calories is important too–I just think we shouldn’t overdo it.  I believe it ultimately comes down to listening to our bodies.

There are approximately 230 calories and well over 13%, or 10 g of  protein! I don’t think that’s too shabby considering that there’s a full day ahead of us and we can keep getting more protein from other foods. ;)

With that said, make this breakfast with your favorite toppings on!

As for these cookies that I had mentioned last time…

Oopsies!!! Somebody lost the recipe!! Noooooo.  These cookies had the unique spice called “Coriander” and coconut oil, and it was my first time trying Coriander  in a baked goodie.  Hopefully I can find the recipe the future.

My weekend was filled with “trying to effectively study” with not a whole lot of studying done.  I kept dozing off as I hit the textbooks and E-books.

I hope you’re all having a blessed start of the week.  After reading some blogs, I’m now craving Jessica’s Tiramisu Froast and Hannah’s bars. Mmmmm

I cant find chickpea flour and it is slightly breaking my heart!! I guess I need to head to trader joes to find it. Sprouts usually has EVERYTHING, but they didnt have this flour :( LAME! These pancakes look so so good though! I NEED that flour darn it!

Kat have you tried Henry’s? do you have one around you? they definitely do have it! TJs doesn’t SEEM to have it. I got it at Henry’s though :D

Ahhh…. those pancakes look super duper fabulous!! My pancakes are hardly ever fluffy either. I guess it just proves that pancakes don’t have to be fluffy to be delicious! :D

I hate losing recipes! It usually happens to me when I make something that I don’t blog about for a while. I never right down my recipes before hand, but it’s definitely something I need to work on!

Memorable event this weekend…. going to my friend’s concert! She plays the violin and did the most AMAZING job!! It was such a blessing to here her play :)

Oh my goodness, those look amazing!! I think those are what I’m craving now, LOL, I seem to just crave stuff I see on blogs. So needless to say I’m usually hungry for a bunch of random stuff. I haven’t had socca in a couple weeks, I think it’s time to bring it back! :)

I think counting calories can quickly become an evil, evil, mind-suffocating trap, so it’s wonderful to hear you haven’t fallen in! These pancakes/soccaa look amazing! I’ve yet to try socca, because I promised myself I’d finish my coconut flour before I bought chickpea flour :)

I actually LOVE chewy carbs, so these pancakes are lovely to me. I don’t like chocolate though, so I’ll turn them into green tea socca pancakes. How’s that? :D

I think people ironically get more and more unhealthy as calorie-counting became an obsession.

Oh my stinkin’ goodness, those socca cakes look INSANELY delicious! I can’t believe how cute and perfectly shaped they are, making them look that much more tasty! If only garbanzos didn’t do such a number on my tummy :( I miss you, garbanzos babies!
