Wow, talk about lack of preparation spontaneity!
Greg and I have been talking for the past few weeks about taking a trip to the Bay area. We’ve been wanting to meet up with some of his friends who have been living there for a while now.
Due to all the busy-ness, I had forgotten that we were sort of planning on going up there, and when he asked me if I was down to go on Saturday, I automatically said yes! This all happened literally 2 hours before we took off.
And off we drove for 6 long and fun hours! It was only fun because of the gigantic hills, and because we always have so much fun together no matter what. We probably got 10 years younger from laughing so hard at the silliest things!
Unfortunately, as I was JUST ABOUT to post some amazingly beautiful and fun photos, I realized that I had somehow accidentally deleted the whole file. I am not quite sure how this happened…but I know it happened.
*Breathe in, breathe out.* “Oooooohhhsssaaaa….”
Wow. Go me. Well, if you didn’t already know, I have a tendency to be on cloud 9 much of the time! DOH!!! That was such a memorable trip together before marriage!
I just have this funny mindset of wanting to keep pictures to specifically show our future children. I think that stems from the fact that I have only a handful of pictures from childhood. (We couldn’t afford a camera back then teehee) Also, my parents didn’t have that privilege as children and I always wish I could see how they were back in the day.
Alright. You know what? It’s okay because there will be countless more opportunities for beautiful memories as long as I’m alive. Now that’s the spirit!
During our stay in San Francisco, we…
- went to the Bay and saw the Golden Gate Bridge from afar

- went to Chinatown and ate some delicious and original Chinese food! ( I had dimsum, and Greg+Tony had Congee)
- just walked in a really great church called Living Hope Christian Center. The message about “wisdom” and “intimacy” with God was such a blessing. It was Tony’s first time there!
- went to a park with a gorgeous view of the city in the background (of which I cannot remember the name)
- ate Ethiopian food at Axum! It was so delicious! Kind of a cross between Mediterranean and Indian?
- visited Ghirardelli Square!! It’s such a cute little place with fun stores and great ice cream. I had asked Courtney for activities she would suggest, and even though I saw the reply late, I believe this was part of the area she talked about!
Let me make it up to you with a delicious dessert that was inspired by Angela from OhSheGlows. See? Not all is lost.
I made several changes to the recipe since I didn’t have all the ingredients, and I also wanted to change it to my family’s preferences.
Raw Banana Date Square
Adapted from Angela at Oh She Glows
Ingredients:
Crust:
1.5 C almond meal
1.5 C oats
1/2 tsp sea salt
5 Medjool dates+1/4 C golden raisins
1/8 C coconut oil
1/2 tsp vanilla powder
1/4 tsp cinnamon
1/2 of a banana
Paste:
5 Medjool dates
1/4 C raisins
1.5 bananas
Directions:
First, mix all the dry ingredients in a large bowl.
Then, mix it all in a food processor along with the dates and the raisins. After it has reached a slightly crumbly consistency, add the banana and oil. Save about 1/2-3/4 C of the crumbs.
Grab a square pan and after having poured the mixture into the pan, press it down with your hands. Right away, process all the ingredients for the paste and you will have a slightly thin consistency.
Spread it on top of the crust and sprinkle the crumbs. Refrigerate it for 1 hour or longer. If you are feeling antsy, then you can freeze it and eat it right away!
I cut it in 16 pieces.
Then it became night and I had to turn on the lights. See the orange hue?

This was such a delicious and healthy dessert! I seriously couldn’t stop eating it, but I exercised self-control after the 2nd piece.

Bummer on the pics getting deleted somehow. I always hate when things like that happen. I’m such a picture hoarder too. It certainly sounds like an amazing trip. I would love to go to San Fran sometime.

you should totally give them a try Jenny! Angela’s recipe is simpler, and I’m sure they were delicious. But so far, this one satisfied.

ohh that’s so cool you’re going!! everything is truly hippy-ish, but there’s so much stuff to do/eat and it’s so eclectic that I think you’ll love it. The people are so different that even for me it was like culture-shock! I loved it

Those bars sound SO yum. I love anything with bananas and dates so combining them is definitely a winner! I think I may just have to make these sometime soon! I have to admit though, I’m seriously on a cookie-kick at the moment. I just love ‘em

I love ethiopian food!! I wish there was a place near me that had it.
I really want to go to SF again. Not just for a food festival, but to visit properly. I love bars more because it’s got layers and cookies are kind of…boring. I hate cookies with chocolate in it, too.
I do love chocolate but I can only have so much of it in one sitting

I definitely have lots of memories and pictures of my family when I was younger; sometimes I like looking at them! And cookies are my go-to dessert!

SF sounds like it was awesome! I have only spent couple of days up there and it’s always on business! I want to go stay for a few days and just wander the city!
