Happy Hump Day Wednesday my friends!
Today was an out of the ordinary kind of day, because I’m not exactly certain as to why my body has been so much more “sparky” and awake in the mornings.
Lately I’ve been getting out of bed by the time 6 or 7 am rolls around. I think my body clock is adjusting itself to a new job in the future as well as marriage.
Getting up this early may be normal to those of you who have early work hours waiting for you, but for someone like me, who hasn’t had an early job for the past 4 months, it is something to put down in the Guinness Book of World Records. I kid I kid, it’s not that amazing!
*Quietly snickers to herself with a mischievous smile patting her own back*

Spiced Socca Pancakes {Lots of Protein}
Ingredients:
- 1/3 C chickpea/garbanzo flour
- 2 TBSP rolled oats
- 1/2 tsp baking powder
- 4 drops vanilla Stevia (or sweetener of choice)
- 1/4 C almond milk
- 1/2 tsp vanilla
- 1/2 tsp cinnamon+1/4 tsp ginger
- 1 tsp chia seeds
Directions:
- Grab a medium bowl and mix all of the dry ingredients. Then add the liquids and gently, but thoroughly whisk together.
- Put a skillet on medium-high heat and lightly spray with PAM. With 1/4 C measuring cup, pour the batter onto the skillet. Cook for approximately 1 minute each side. Then flip. And voila!
Make sure that you don’t try the batter when it’s in liquid form or you will regret it! However, tasting it at the end with that smear of sunflower seed butter, banana slices, and maple syrup is heavn’ly indeed. Give it a try!

After digesting for about an hour, I headed out to my outdoor run in my new Asics! I ran in them once at the gym, and they are definitely the most comfortable running shoes that I’ve ever worn!
They’re super pillowy and full of cushion on the inside, and by far the most lightweight pair I’ve owned thus far.
You can tell I was really excited to try these in the wild outdoors, can’t ya?
I’ll be talking about these shoes a bit more in a future post, so keep an eye out for that.
I have so so so much to share with you about everything that’s been going on in this vida loca! But that will have to wait, as I have many things to do today.

Asics are awesome! I’ve had several pairs and loved all of them. That looks like a great recipe. I’ve never tried making anything with chickpea flour but have heard such great things about it!

Totally making these pancakes STAT!! I need to use up this garbonzo bean flour and dont want to over do it on the socca. It gets boring after a while lol Pancakes on the other hand? Something NEVER get sick of!!

Hi Olivia! I’m prob. not 100% accurate with these calculations, but the overall calories without the toppings are probably within 200-210 calories, protein is more than 8g, fiber more than 8g, and lots of iron!
for a 120 lb. individual who’s somewhat active, the protein intake is I believe…70g? And fiber about 30g for women. I guess it’s not a VERY high number on the protein, but if one takes into account eating protein throughout the day like beans, meat, etc., it should easily go up in numbers
