Holy cow! Or should I say, holy tofu?!
Woooo! It’s getting hot in here [literally]! And that’s because I just had an amazing dish that had a kick to it.
I wasn’t feeling heavy food in any manner whatsoever; perhaps it’s the fact that I’ve been so sleepy lately due to the errands and projects I’ve been working on for the wedding. But I’m so glad that it’s the fun kind of busy-ness.
In lieu of a meaty dish, I went ahead and recreated this delicious kale soup a la vegan style.
Have you ever tried a restaurant dish that looks so ridiculously simple, yet tastes so heavenly and so complex that it invites all of your sense to go, “oooohhhh ahhhhhh…..mmmm”?
Well, that one dish is the Spicy Italian Sausage Kale soup that I once tried at The Greenhouse Cafè.
I decided to make this lighter variation of the soup, all whilst crossing my two little fingers in hopes that it would come out somewhat close to the original version.
And I am happy to report that I did it! In my humble opinion, this healthy dish comes as close as it gets to Greenhouse Cafè’s recipe! (At least taste wise) I’m still not sure what drug ingredients they put in it.
I remember once asking the owner, “Can you tell please tell me how you make this soup?” But being the nice and modest man that he is, he nervously brushed off my request as he giggled his way to the kitchen.
Without further ado, I present you…
Spicy Kale Pasta Soup *Vegan*
Ingredients:
- 1 TBSP olive oil
- 1/2 an onion, sliced
- 3 large kale leaves
- 2 large stalks of celery
- 3 medium carrots, sliced diagonally
- 1/2 C chopped tomatoes (I used cherry tomatoes)
- 7 C water
- 2 cubes of vegan bouillon***
- 3 cloves garlic, roughly chopped
- one 15 oz. can of chickpeas, rinsed
- 1/2 C tiny dry pasta of your choice (I used Stelline)
- sprinkles of black pepper
- 1 1/2 tsp sea salt
- 1 TBSP nutritional yeast
- 1 TBSP white cooking wine (optional)
- 2 1/2 TBSP lemon juice
Spices & Herbs:
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/2 tsp ground coriander
- 1/2 tsp cumin
- 1/2 tsp ground sage (or fresh)
- 1 tsp crushed dry rosemary
Directions:
- Grab a medium-large pot and heat it up on low medium heat. Pour the olive oil and let it heat for about 30 seconds. Throw in the sliced onions and sauté until it becomes slightly translucent. Add sprinkles of black pepper.
- After cooking for approximately 5 minutes, add the carrots, celery, and tomatoes. After mixing it a bit with a wooden spoon, pour in the water and bring it to a boil. Then, add the bouillon cubes and let them “melt”. Add the garlic, kale, salt, nutritional yeast, cooking wine, lemon juice, and the rest of the spices and herbs. Bring it down to a simmer and cook for about 8 minutes.
- Now add the chickpeas and dry pasta. Cook for about 5 minutes or according to pasta cooking directions.
- Voilà! Serve in pretty bowls and garnish with crunchy crackers. I used pita chips!
***If you don’t have vegan bouillon on hand, you may use anything like vegetable (or even chicken) broth. If you end up using a liquid broth, make sure to adjust the water measurement.
I used the Rapunzel brand, which can be found at most health food stores.
Lots of spices! But these are the ones that create such a strong flavor.
The heat of this soup is perfect! Not too spicy, but hot enough to make one’s stomach warm
So there you have it! The successful recreation of a dish that I’ve been craving for a long long time.
*********
Finally! It is finished!
I am officially done with the DIY invitations and they were sent out today. Weeeee!
Fortunately, Emily and Susan have helped me more than I can thank them for. Nevertheless, it was no easy task trying to overcome obstacles such as printing glitches, items that I forgot to purchase, etc.
Everything turned out perfectly despite the countless almost-sleepless nights.
I was aiming for a DIY invitation that would make one feel kind of “at home” and of course, one that would actually look like a DIY without looking too “cheap”. Opinions may vary and I can already see the expressions of some traditionalists as they open the envelopes, but what matters is that I had so much fun making these. And to top it off, they were made with LOVE.
I have to admit that all the preparation has been bringing the inner artist in me that has been long lost. I am hoping that it’s here to stay, especially when I am so incredibly inspired by people like this awesome woman! Even her blog title is so cool. Aloha brah!
Since I didn’t want to spend a lot of money on decorative chalkboards for the wedding, I looked up the ‘how to’ on the search engine and her blog popped up. Her creation is nothing short of amazing, and I’m pumped to make chalkboards at home.
The best part about it? I can make them any color I want for less than 50 cents each. Think, pretty lilac and pastel green chalkboards. Muahahaha!
I’m thinking of writing a post about the sites and locations that I’ve been to in order to get decoration items for cheap. Especially for those readers who live in Canada and California, pretty much everything is double the price of other states in the U.S.!
So, I am on a mission to help fearful women out there to be at ease when it comes to the preparations. I sure hope this works, because I’m still learning myself! Hehe.
Oh yeah, and Greg and I had our engagement photo shoot yesterday! It was so much fun and I really wish I could do it all over again.
I hope you have a beautiful weekend and talk to you soon!
What was the latest DIY project you’ve worked on, or want to work on?
Do you prefer brothy or creamy soups? Favorite recipe?
Grace & Peace,
Ellie <33

:) Its getting sooo close!! Yay for love!!
And I am a total soup lover, of ANY kind. I prefer broth based since I know they are healthier, but sometimes I jsut crave a nice cheesy broccoli soup!
awww thanks Kat! You don’t know how great it is to hear that someone likes it! Hehe, I like ‘em too, but it’s nice to know that someone other than me will think the same way. Oh! Cheesy broccoli or baked potato are amazing!
The invites are stunning! I love how natural they look, like a reflection of your focus on whole foods and organic living
Yayyy thanks Hannah! Always so uplifting, you are.
You do realise how perfect this soup is for me right now?
Thank you! What a great recipe.
Annnd – your invitations are gorgeous! Absolutely beautiful, you did a wonderful job.
De nada, amiga! Why am I typing in Spanish? Not sure.
Hope you’re doing well! Funny how we both had 25th birthday celeb. on the same day too.
We made our own invitations for our wedding. Actually, my mom made them haha. But it was so much cheaper that way! You’ll have to post some engagement pictures!!
hahaha! Your mom must have had sleepless nights too, but that’s so sweet of her!~ I just saw the price range for prof. invites, and they can go from 100′s of dollars to a 1,000!!!! 0_0 Yikes. I’ll post them up for sure KRisten
I saw the recipe picture in your header and got totally excited! I have the ingredients, and I’m totally going to make kale soup for dinner! Looks SO good!
Niiice!~I hope it went/goes well!
I love a good creamy soup. And my husband would LOVE a spicy soup!!
I have to say that since I like everything, I like creamy sometimes, and spicy/broth other times. Can’t choose!
But, YOU can make a good creamy spicy soup! teehee
What a yummy looking soup! I like creamy soups and my favorite kind would have to be tomato.
oOooO creamy tomato? that one’s good…
The soup sounds wonderful! I prefer brothy soups most of the time.
Your invitations are beautiful! We made our own invitations when we got married, and it was a lot of fun. But I also remember the time before our wedding being quite stressful. Even though we had a “low-key” wedding, there was still soooo much to do. Enjoy this time, and don’t worry about things being “perfect!” They will be!
Hehehe thanks Andrea! You’re so sweet
Yes, I’m trying to not stress out and TRYING (keyword, trying) to delegate even though it’s not my strength. Also, just letting things flow and always have plan B, or more like, I’m sure something better will come along if A doesn’t work lol.
awwww the invites look wonderful! i helped my friends do their wedding invites too and it was so much fun stuffing the envelopes n such.
hope the engagement shoot went well! hehehe can’t wait to see the sneak preview
. ps – love the kale soup idea! i’ve been enjoying some adzuki miso soup lately!
The invites look great, girl!!
