Hello there!

How have you all been?  I’ve been doing just dandy and being so blessed by many beautiful series of events!  But…and yes, there is a but…I’ve been going nutzo with my blog’s domain renewal.  Wow, I never thought it would be so confusing and difficult!

None of the registrars seem to know the answer to this domain renewal topic, and I’ve been going back and forth with them for weeks.  And the crazy thing is that my domain expires today!  So [hopefully nothing happens] I’m crossing my fingers that someone will end up pointing me to the right direction regarding this issue.  And if anything happens, please be patient and stay fwends with me! :D

*phew….*
Now that I got that off my chest, I want to share what I’ve been up to!
Several days back, I met up with Sophia to eat some Indian grub!  We went to a placed called Mayura, which is located in Culver City by L.A.
We had some delicious dishes as we caught up on our lives.  Catching up was especially needed since my getting married last March! :)
I will be sharing in detail about Mayura in other posts to come, as I don’t want to lengthen this one any more than it will already be.
Praying beforehand
On Sunday our church had an amazing worship evening for the cause of missions to the Philippines.  We teamed up with another local church to raise funds in order to send a team to the Philippines as well as donate to the churches that are being built there.  God is doing amazing things!
On a related note, I am really grateful for what God’s been doing in me and around me by pairing me up with beautiful sisters in the Lord.
If you’ve been following my blog then you’re probably aware of the fact that Greg has recently become the pastor of our new church.  All I can say is that it’s been such a roller coaster of emotions of fitting in to a new crowd!  On top of that, we know that being in the ministry is no cake walk, but it is so worth every bit of high and low, because we know that God provides us the strength that we need.
It makes me giddy just thinking about the women at this church, and my heart really goes out to them.  The other thing that keeps me at the edge of my seat (in a good way) is the thought of getting a women’s ministry started–but not just any women’s ministry–one that will welcome healing from the inside out as we become channels of peace and love unto others.  ;)
Yup, I’m sure you can feel my excitement!
Fast forward to Tuesday, and more Indian food was consumed in the Betzen household.  <—Check that out, I am Mrs. Betzen now! Muahahhaaa.
We drove down about 10 minutes to a new to us restaurant called Bombay Tandoori Grill.  I saw on Yelp that it got over 200 reviews and almost 5 stars!  Greg ordered the Karahi Chicken dish because he’s been missing spicy food like crazy.  I’ve been craving it too, but since my sensitive stomach can’t handle too much spice anymore I went with another great meal.
And Saag Paneer it was!  Saag Paneer is basically a ground up spinach sauce with homemade cheese cubes, and I went with the medium spice.
Everything that we ordered at Bombay Grill was really good, including their saffron rice which we ended up sharing.  I loved the crunchy slices of onion and little green peas rolling around the rice.  For some reason I always like my rice “fancied” up, as opposed to plain white rice.
I was stoked about getting our picture taken because we ended up being twins that day!  Hehehe, Greg and I love to wear vests and for the first time we actually matched with the same outfits.  Perhaps next time we’ll wear some cool superhero shirts and embarrass ourselves?! :P
Greg and I loved Bombay Tandoori and we cannot wait to go back soon!  We’ve been on an Indian food marathon and we’re certainly not ready to stop any time soon.  Perhaps it’s the fact that we’re both missing India like crazy!  Who knows.

OXO Salad Spinner Giveaway

A while ago–and by “while” I mean, quite a long time ago (sorry OXO!)–the company OXO sent me a salad spinner to give away to one lucky reader.

I don’t know about you, but one thing that I don’t look forward to in the process of cooking is washing lettuce/greens and not being able to dry it.  I mean, who likes wet and soggy salad?  Not I!  What’s worst of all is that you can’t really dry each piece of lettuce one by one.  And the way that I usually deal with that is by wrapping it in paper towel and shaking it till the moisture is gone.

One great way of eliminating all that extra work and ensuring that you get clean and dry salad is by using this little beauty pictured above. :)

All it takes to enter this giveaway is by doing the following:

- Tell me what your favorite type of salad is, or just simply leave a random comment

Optional:

-Follow me on twitter & tweet this giveaway and tell me that you tweeted about it:  “Don’t like soggy salad? Well, now it’s your chance to win an @OXO salad spinner at www.fitforthesoul.com!”

-Follow @OXO on twitter

This giveaway will end this Saturday, April 28th.

Have a great day and eat lots of greens!

Love,

Ellie <33

I’m so glad you have such exciting things happening! Your enthusiasm is so wonderful to read. This Indian food looks great too! As for my favourite type of salad? Spinach leaves and mango, with anything else being optional :)

Thanks for the catch-up! A women’s ministry sounds like it would be a great thing for you to do, and I can only imagine how much you would be able to serve a community of females. Your comments on my blog alone have helped me more than you probably imagine!

Your saag paneer looks amazing! I havent had it in ages, but I do love the flavors in it! Heck, any Indian food is good in my book!
Hopefully the transition in the church goes smoothly. It can be difficult settling into a new community but you’re going to do wonderfully!

Oh man that Indian food looks sooooo good! I wanted some for dinner tonight, but with my race on Sunday and my stomach acting up lately, no chances to take over here :(

I love my salads with lots of goat cheese and loads of veggies!

Oh I’ve always needed a salad spinner! :-)

Haha, it’s so weird to think of you as a Mrs., to be honest…because we’re the same age! I guess you feel the same way– but we’ll get used to it. Soon it will be impossible to think of you without thinking of Greg as well. Haha!

1. Your passion for the women at your church is contagious. God is going to do great things through you, sweet lady!

2. I love you guys’ matching vests – cute!

3. I could actually really use a salad spinner! I love cobb salad the best, I think. Anything with bacon and eggs and fresh tomatoes is a winner! :)

I love lots of kinds of salads. I have a hard time choosing a favorite (of anything, really–my hubby thinks it makes me hard to shop for) ;) In fact, I could go for a salad right now for a post workout late snack. I’d love to win this–my salad spinner bit the dust.
