Kauai's Pulled Chicken Quesadilla


Hi everyone!  Do you recall that day when I mentioned that someday I would re-create this amazing quesadilla that Greg and I had in Kauai?

Well, in order to re-live those awesome times in Kauai I challenged myself today to a crock pot rendition of that meal.  It was probably the best idea ever considering the fact that the cooking time with me standing by the stove was minimal, and it ended up being super convenient because I volunteered with the after school kids today.

Trust me when I tell you that today's meal was beyond delicious, and I highly recommend cooking chicken in the crock pot!  And the best part of all?  It was probably the much lighter version of the quesadilla pictured above. :D

Kauai's Pulled Chicken Quesadilla

Makes approximately 6 servings

Ingredients for Crock Pot:

  • 2 large chicken breasts
  • 1 C chicken broth
  • 3 C water
  • 1/2 medium onion, sliced thick
  • 2 TBSP pure maple syrup
  • 1 TBSP dry thyme
  • 4 dry bay leaves
  • 1/4 tsp salt & pepper
  • 1/2 tsp ground ginger
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 3/4 C good BBQ sauce

Ingredients for Quesadilla:

  • Enough tortillas for the meal (I used 4)
  • sprinkles of Mexican shredded cheese


  1. Heat up a crock pot on low heat (approximately 6 hours).  In a little bowl, stir all the spices, herbs, and salt together.  Place the chicken breasts in the pot, along with the onion.  Then pour the broth, water, and maple syrup.  Let it cook on low (6 hours) heat.
  2. After it's thoroughly cooked, drain the juice into a glass bowl and save it for future recipes (if you so prefer).  Shred the chicken with two forks and put them back into the crock pot.  Add the BBQ sauce and mix it well.  Cook on high heat for about 10 minutes.
  3. Grab a skillet and lightly spray it with oil.  Place a tortilla on the pan and sprinkle it with your desired amount of cheese.  Top it with the shredded chicken and spread it evenly.  Then top it with a little more cheese and seal it with another tortilla.  Flip when the bottom is slightly browned.
  4. Cut with pizza cutter.  I put shredded lettuce on the plate and garnished the quesadilla with guacamole and chopped green onion! :)  Bon appetit!

I made some guacamole which unfortunately didn't taste very fresh. :(

Trying to find bread and tortilla that's high in fiber, neutral in taste, and still affordable, can be quite the challenge--primarily because Greg is still particular about certain foods.  But this one was a winner! :)


Today has been a really great day, and catching up with my friends on the phone was probably one of the highlights!  :)  However, towards the end of the day it's been rather tough because I started to suddenly get down on myself and "disliking" myself.  I know that these aren't my thoughts, and I need to renew my mind!  What I need to do tonight is pray and ask the Lord to help me see through His eyes, and not my own--because His love for me is PERFECT. Yes, I believe it and I will own that piece of truth!
