How can I thank you all for the kind and supportive comments regarding my dietary experimentation? Truly truly, I am infinitely thankful for your tidbits of advice, which by the way, have shed some light on gluten free cooking as well as having me left with assurance that I should keep persevering through this phase of trial and error.
That’s one little thing that I’ve learned through my short lived life when it comes to “healthy living”; life is about trial and error, although we can only hope to have less of the errors and more victories instead. In order to be healthy, we don’t need to be perfectly healthy to begin with! Kind of a head scratcher, isn’t it?
I mean, this may be a far-fetched illustration of the point I’m trying to make here…but how on earth are we supposed to know what true love is when we haven’t seen hatred and darkness? Or take this as another example. How can we know what well being truly means when we haven’t experienced any sort of pain whatsoever? Surely we all have felt pain in one way or another. Or, how can we appreciate God’s lifesaving grace when we haven’t seen our sinful shortcomings?! And in that same token, I believe that true physical health begins with the mere baby step of seeking to become healthy. So we don’t have to be healthy from the get-go. It’s like we were once in darkness, but now that we recognize the problem, we’re willing to do something about it.
Everything in life is a process and a [long] journey, and when we are able to embrace ourselves despite our physical weakness and ailments while keeping a positive attitude, then we can move forward to actively seeking out a healthy lifestyle. So just because you (or I) don’t have “health” pinned down completely (and we never will), it doesn’t mean that we can’t help others to become healthy, let alone blog about it so as to inspire others to do the same.

I hope to encourage you all along the way by telling you that you can have flaws, weaknesses, ailments–what have you–and still make great recipes that help you feel better, exercise vigorously, and still be hurting every now and then, because we are mere mortals (said in a British accent) who are always looking for ways to become better in different aspects of life.
And now that I’ve hopped off my soap box, I present to you my baby!
My proudly kitchen birthed creation, that is. And she’s gluten free too, yay!
What’s that? Oh, you’d like the recipe! Okay here it is. Aren’t I so nice?

Peachy Millet Pancakes {Gluten Free}
These pancakes are amazingly moist and fluffy, almost like the regular white flour laden pancakes that you would order at a diner. Except, these are completely gluten free friendly and can be modified with different neutral tasting flours. To my surprise, it tastes delicious and is quite filling. I made these pancakes bigger than usual so I ended up with only 3 of them. However, 1/4 C of the batter should rend about 4 pancakes per serving. If you try them, I hope you enjoy them as much as I did.
Makes 2 servings
Ingredients
- 1/2 C millet flour (I used Arrowhead Mills)
- 2 TBSP GF oat flour (I processed my oats)
- 3 TBSP brown rice flour
- 2 tsp baking powder
- 1 tsp baking soda
- pinch of salt
- 1 tsp chia seeds
- 1/4 tsp cinnamon (optional)
- 1 egg+1 egg white
- 1 TBSP melted coconut oil (or any neutral tasting oil)
- 1/2 soy milk
- 2 TBSP greek yogurt
- 6 drops Stevia (or other sugar/sweetener)
- chopped walnuts
- 1 peach, thinly sliced
- PAM for skillet
Directions
- Grab a medium bowl and whisk together all of the dry ingredients, including the walnut pieces.
- Add the eggs, soy milk, and Stevia into the bowl and gently mix for a short length of time. Right away, add the greek yogurt and oil last (if you’re using coconut oil since it hardens up quickly), and whisk the batter just until it’s well incorporated. Even if there are small lumps, stop whisking because it will harden the pancakes.
- Heat the skillet on medium heat and spray it with PAM. Wait for 30 seconds and start pouring in the batter in measurements of 1/4 Cups. Put one peach slice in the middle of the cooking pancake.
- When it’s just about to get little bubbles on top, flip it and cook until it’s golden on the other side.
- After the pancakes are finished, grease the skillet one more time and caramelize the peach slices until they’re golden.
Cook.
Plop peaches on top.
Drizzle pure maple syrup.
Eat and enjoy!
I have to be honest and say that I was really surprised by how these turned out! After having had some failed GF recipes I was starting to get a bit discouraged but kept at it. As a result, these beauties were born!

Ooh, these look incredible. So fluffy! And I love the idea of cooking the peach into the pancakes.
Ahhh, it’s so amazing! Almost any fruit caramelized into batter tastes really good.
I hope you don’t have to be GF because it is hard, but I’m selfishly glad because of all of the recipes you are posting! I’ve been looking for good GF baked goods!

It DOES seem really challenging Laura! I give you major props for that. Whenever there’s this smell of breads and pastries I get so tempted to buy them~but if I do I usually end up regretting it, lol. That’s so true! Many times we give and take when we’re in a community.
Everything in life is a process and a long journey..yup absolutely! I can’t expect everything to be perfect bc..well what does that even look like? Life is a learning process. I may think that I know everything right now, but come 10 years no even 5 years later, I’ll quickly realize how little I knew back then. With age comes wisdom..That’s something that happens naturally through life experiences. I sure am going to try my best to live to the fullest..here and now..but I expect to face many disappointments and shortcomings along the way. I already sound wiser than I was three years ago hehe.
Anyway, the pancake looks amazing! And I’m praying that you’ll figure out the culprit so that you can feel better! Like I said, I’ve never tried gf recipes before, but I did go through your recipes so that Tim and I can try some of them. At first I was overwhelmed by the huge ingredient list, but then I saw that basically the same ingredients are used in most of the recipes. I’ve added some of them to my grocery list! I totally agree! Life is about the journey, not the destination. The destination changes every day! Every day I try really hard to remember the unending PRESSURES that come from perfectionism (I would definitely kow) and to realize that accepting flaws is INTEGRAL to happiness.

And I know–I don’t hear much about millet either. But last year, I discovered coconut flour and I didn’t hear much about it either…now it’s huge! So i’m sure it’ll be the same case for good ol’ millet. She’s been neglected for far too long.
