Yowza, is it already Tuesday and I’m done with both of my interviews?!
As always, you guys never cease to amaze me by your good willed wishes and constant support, and I am so thankful and glad that the interview process is over…for now. ![]()
*Phew* Don’t get me wrong. I am beyond grateful that I finally got the opportunity to do that, but my stomach is glad to have a rest from those butterflies! But in actuality, this time around it wasn’t bad at all compared to my former experiences. My thought is that I’m beginning to love the challenge of an interview in a very formal setting and oddly enough, I believe that blogging and writing has greatly aided me in gaining confidence with word and speech. Talk about strange but cool! Anyone else out there with similar experiences like that? There are so many little things that I’m lovin’ today, hehe.
We’ve been in desperate need of groceries and food in our fridge this week, as it usually tends to be the case towards the very end of the week and beginning of it. I guess we’ve been eating more food lately, and of course that’s never a bad thing. After going back and forth and scouring through the fridge, I decided that pumpkin spice oats would be the best bet if I wanted something delish and filling. This time around I added egg whites while the oatmeal was cooking and that combo is forever tasty and fluffy.
I think I’m getting pretty good at really improvising my meals because after losing some brain cells over lunch, I threw together a corn tortilla, avocado, bell pepper, hummus, salsa, some greens, and some really good and healthy mashed potatoes that I made last week. The mashed potatoes are full of flavor and creaminess, but surprisingly they can easily be veganized.
After my interview was over I drove to the gym and performed about 20 minutes of Stepmaster intervals and did a combo of upper body weights and body weight exercises. The Stepmaster is brutal and always leaves me sweating 10 minutes after the event.
This apple sunflower butter sandwich was going to be my afternoon snack because I always end up craving fresh fruit and nut butters during the day! Unfortunately I forgot it on the kitchen counter as I literally stormed out of the house to be on time for my interview.
So in order to make up for that because I am currently at Starbucks, I got myself some iced coffee along with nuts+fruit.
There’s a huge grocery haul in store today and then I’m meeting my sisters from church! Last time we left off in prayer and planned a date nigt to get together at The Boiling Crab. I’m so excited not only because of the company, but also because I’ve been waiting to check this place out. All of my friends rave about it while I have no idea what they’re talking about. ![]()

I totally understand the interview anxiety – and I’m glad I read this post today. I do a lot of interviews as a part of my job, and I want to make sure that I don’t get numb to the panic and anxiety of the people I interview. Good luck and prayers for the right results for you.
I crave strange things.. Pickles. Perfect foods bars. ThinkThin raspberry bites. Rumbi brown rice and tofu bowls. Popcorn. Hot cereal. Kombucha.
Maybe I just like food.
Interviews can be so scary! I completely understand. They always feel so much better when they are. I crave weird things. Some days I really want avocados, peanut butter and anything sweet.
My favorite thing that I have learned through blogging is to be more open! It really has done wonders both on my blog and connecting with people on a more personal level day to day.
Eee! I can’t believe I wasn’t around to wish you luck on your interviews! But I’m sure that you absolutely killed them! I know what you mean about blogging helping to improve surprising areas of your life… I’ve experienced the same benefits from blogging when it came to writing essays in school, and just being more confident/outspoken overall. I used to be sooooooo incredibly shy, but blogging has helped me break down a lot of the barriers that used to hold me back
And you’re definitely a lot more creative than me when you lack groceries. If I find myself with an empty fridge, I usually resort to cereal or frozen waffles for dinner lol. And when it comes to cravings, I just love snacking on yogurt with fruit, trail mix, bananas with almond butter, and Popchips. Of course, things like ice cream and cookies always end up sneaking their way in there as well

When we dont have groceries, my eating starts to go baaad. Ill do smoothies (good) snack on nuts or rice cakes (ok) and then eat something like a bag of popcorn for dinner (bad) lol
That’s definitely one bonus to interviewing a lot – you get much better at it! I’m glad to hear that they went well.
When I’m low on groceries, I’ll dig into our emergency stash – we usually keep a bag of frozen Trader Joe’s pasta in the freezer or a can of soup in the pantry.

I feel you on the interview part! You must be so eager + nervous at the same time throughout the interview. A mere picture of myself having to sit through several interviews for scholarships is enough to make my heart beats like a thousand horses during a stampede. Oh, during interviews, my hands tend to turn icy cold due to nervousness, wonder if that happens to you?

Am i the only one who thought about McDonald’s as soon as I saw your post title? Hehe! Glad to hear your interviews went well! I haven’t interviewed in about 4 years so i can’t quite remember what it’s like anymore! DUDEEEEE I would love to go to the Boiling Crab! My husband and I are actually going to L.A on Friday for one week vacation, hopefully we can stop in and try it

Usually asian snacks like bubbletea, egg waffle, or deep fried taiwanese style chicken nuggets. If that’s considered a snack. Haha!

Blogging is a great way to stay accountable! (it’s definitely helped me stay accountable, fitness wise)

I normally write whatever I want to write when I first started blogging, but some of my comments actually made people upset so I guess, to answer your question, I’ve learnt to exercise more restraint and be more considerate (not that I was ever ‘mean’ but you know…).
I never thought to made a sandwich with apples and nut butters – will give it a go next week

I LOVE the idea of making a sandwich with apple slices!! I love mixing things up from the conventional!
haha I’m so surprised at how many people are intrigued by it! But yes~I think it’s a great way to get apple+nut butter on the go because it doesn’t get as messy as when I just stuff one apple slice and nut butter–or else it gets everywhere!
That is the cutest apple sandwich! Glad you made it through the interviews–they are definitely emotionally exhausting! And blogging does have it’s surprising benefits. Is it goofy if I say it’s really helped me relate to people/be more interested in their life stories? It’s a great way to step out of focusing on your own story and actually work on sharing.
not goofy at all! I think that’s so awesome because not enough people in this world stop to wonder about other people’s stories. We need to do that more!
