October Favorites

Hey guys, I hope you’re having a fantastic Thursday and that life is treating you well! Today I’m going to share with you my October favorites since it is almost over after all—and that reminds me, wasn’t it just yesterday that we were celebrating New Years?  It’s almost 2014, and though I’m excited for the possibilities that the future holds, I’m in shock mode that life is zooming past me.  That’s why I love blogging so much, because it allows me to reflect and look back at the blessings that we’ve been given.

So back to October favorites!

1.  Healthy but not so healthy, yet who cares because I’m still going to eat them crackers

April 10-2013 (1 of 1)-282

Ever since I laid eyes upon pita chips some years ago and took my first crunchy bite, I was immediately hooked and never looked back.  Normally I’m not much of a chips kind of person, but these beauties are probably some of my favorite snacks ever!  Especially if Stacy makes them in ginger bread and cinnamon sugar flavor.  Man, I’m not kidding when I say that they taste just like churros—only better and slightly healthier. Smile  Well that was a long rant about pita chips…sorry about that guys!

2.  Granola with perfectly crunchy clustersApril 10-2013 (1 of 1)-283

Next to Love Grown Foods’ granola I have to say that Kind is another amazing company with products that live up to their name!  They make their granola with wholesome and simple ingredients, which provide great benefits to our bodily health which is always a good thing, because I end up eating way too much of this stuff sometimes, hah!

And they not only sell delicious bars and granola, but they also stand for KINDness in the community, and ultimately, the world as a whole.  Their philosophy of simple living by showing love and kindness to others is what sets them apart from the crowd--because really--don’t we all need more of that?

3.  Simple and hearty mealsApril 10-2013 (1 of 1)-288

I tend to be one of those people who try to do every single thing from scratch.  It’s a disease, really.

But lately I’ve been finding more products without all the un-pronounceable frilly ingredients list, which means that they’re pretty much made up of the things I would already use at home.

I love cooking Mexican food with my own collection of spices, but this time I decided to give this seasoning mix a try and it didn’t disappoint!  This somewhat Americanized version of the taco included seasoned lean ground beef (sometimes I like to use turkey), homemade guacamole, hot salsa, cheese, and greek yogurt.  Such a hearty and easy meal!

4.  Baby swingApril 10-2013 (1 of 1)-291

Now, switching gears to non-food related things…

Selah is now over 14 lbs and as you can tell, she’s quickly outgrowing this lifesaver of a swing.  Eeeeeek!

April 10-2013 (1 of 1)-3

Selah was only a few days old.  Miss her so much then but love her so much now—oh, the joys and sorrows of motherhood!

Even though I’m happy that she’s growing healthier and stronger by the day, it’s also a tiny bit nerve wracking to know that before I know it, we won’t be able to use this device for her naps when she’s cranky or fussy.  Thankfully we’ve been transitioning her out of it little by little since she sleeps for 10-11 hours at night.  The only time we find it useful now is when she wants to nap but her crazy awareness of her surroundings keeps her awake.

Which reminds me….yayyyy!  Selah’s sleeping through the night and I really hope she keeps that up!  Thank you Lord, and ummm please don’t let her do the the whole sleep regression thing.  Pretty please?

5.  The big fourApril 10-2013 (1 of 1)-293

Somebody give me a kleenex!  She turned 4 months last week and I couldn’t be more proud of her for coming this far!  Granted, there’s not much she can do physically on her own, but just her being her smiley self is a reminder that she doesn’t have to do anything to earn our love.

April 10-2013 (1 of 1)-294

She just is and we just love her to death.  Every single day I learn something new about God through my little angel, and He never fails to use her to remind me of things that I’ve forgotten.  Open-mouthed smile  He tends to do that quite often, you know.

6.  New toysApril 10-2013 (1 of 1)-292

I am beyond excited to use this bad boy!  Greg surprised me with this birthday gift and it’s just like he read my mind.  I was secretly thinking to myself how fun and wonderful it would be to use a tripod…and not to mention, how much less awkward certain pictures could be if I were to own a tripod.  Haha!   I’m telling ya, Greg and I were made for each other. Winking smile

I haven’t had much of a chance to play with it yet, but I’m trying to break it in so I can take better photos in low light settings.  It would be an understatement to say that I was ecstatic when I snapped a photo of a hair clip in an orange lit room at ISO 100, and it ended up looking perfect with no grain or blur!  Muhahhaha.  Errr maybe too much excitement?

7.  Birthdays galore

Making Indian bread when we spent my 26th birthday at The Gourmandise.

October always equals to lots of family gatherings because our birthdays are bunched up together.  First it was mine on the 12th, and yesterday and today are my mom and pops’!  Needless to say, I love the fact that we now get together for celebrations since we weren’t always a festive type of family.

I’m bringing the cake to their celebration today, and being the cake queen that I am (that’s how I dubbed myself years ago), I can’t wait to pick one out and surprise their taste buds.  Normally I purchase Korean or Chinese cakes because I think they taste the best; however, this time I might just go a different route and get one from Porto’s Bakery.  I’m still debating about that so we’ll see.

By the way, have you tried Porto’s yet?  They’re a Cuban owned café/bakery that sells some of the tastiest baked goods in So Cal.  They’re super famous for their stuffed potato balls and they specialize both in savory and sweet breads.  Another must try if you’re around LA!

Have a wonderful day and take care!

What are your October favorites?  What are you looking forward to in the coming days?

If you like photographing things, do you use a tripod?  If so, have your pictures improved a lot?

What dishes do you always make from scratch?

Love,
